Caesar Dressing

Creamy and delicious - a perfect Caesar dressing recipe!
Ingredients
- 1 egg yolk
- 1/3 cup Parmesan, finely grated
- 1 large clove garlic
- 3 anchovies, rinsed
- 2 tablespoons red wine vinegar
- 1 large lemon, juiced
- 1/3 cup extra virgin olive oil
- 2/3 cup sunflower oil
- kosher salt and freshly ground pepper
Instructions
- Place yolk in a food processor with Parmesan, garlic, anchovies, vinegar and lemon juice. Pulse to combine. With the machine running, slowly drizzle in both oils until emulsified. Season with salt and pepper.
Notes
- Add additional lemon juice, vinegar or seasonings to taste.
